I posted this recipe and reposting it now. This was my friend, Wendie’s recipe. Wendie passed away recently and this is in her honor. I found her handwritten recipe which you can see below. When she was in India for 5 years, she made this often, especially when she had people over or for a potluck. Try out her recipe and think of her when you make it!



This recipe is from my friend Wendie. This is an easy and quick bread recipe and the best recipe for a novice to try. It is also versatile as you can add cheese in the dough or add cheese on top and bake to get a cheesy bread. I serve this as an appetizer for a dip or as an accompaniment to the main course, goes well with soup too.
Ingredients:
2 3/4 whole wheat flour
1 tsp salt
1tsp sugar
1 Tbsp yeast (1 packet active dry packet)
1 tsp garlic powder
2 Tbsp mixture of oregano, thyme, rosemary, basil
1 tsp black pepper
4 tbsp olive oil
1 cup lukewarm water
cheese (optional)
walnuts (optional)
Directions:
Stir together the first 7 ingredients. Add cheese or nuts if using. Mix 2 Tbsp oil and water and knead until elastic and smooth.
Put in a large oiled bowl, cover with a damp cloth and let it rise for 30 mins to an hour.
Oil a pan. Punch down the dough. Press it down in the pan. Brush with remaining olive oil. Cover.
Preheat oven to 220º C (425º F). Bake the focaccia for 20 minutes till golden brown.
