When you come to a realization that Covid is here to stay for some time and you are living in sweats and not sure if your jeans fit anymore but you still have a sweet tooth you find a recipe that is healthy and tastes as good as a slice of carrot cake.
I used to make this long ago and forgot about it. I think it was from beyond the moon cookbook. I recently found a recipe from the King Arthur’s site. I have modified it slightly. This recipe calls for 1/4 cup orange juice. We don’t drink much juice at home so I bought a small carton of juice and froze the rest in an ice cube tray. 4 cubes is about 1/4 cup.
Ingredients
- 1/2 cup raisins
- 2 cup whole wheat white flour or atta
- 1 cup light brown sugar
- 2 tsp baking soda
- 1 1/2 tsp cinnamon powder
- 1/2 tsp ginger powder or 1 tsp sweet turmeric blend (a blend of turmeric, ginger and cinnamon)
- 1/2 tsp salt
- 2 cups peeled and grated carrots
- 1 1/2 cup peeled, cored and grated apples
- 1/2 shredded unsweetened coconut
- 1/2 cup walnuts
- 1/2 cup almonds
- 1/3 cup sunflower seeds
- 1/3 cup pumpkin seeds
- 1 tbsp powdered flax seeds
- 2/3 cup vegetable oil
- 3 large eggs
- 1/4 cup orange juice
- 2 tsp vanilla extract
Directions
- Preheat oven to 375ºF (195ºC)
- Soak raisins in hot water
- Mix together, flour, sugar, spices and baking soda
- Stir in carrots, apples, coconuts and nuts
- Whisk oil, eggs, vanilla extract and orange juice
- Add to dry ingredients
- Drain raisins and add
- Grease muffin pans
- Fill pans with batter (My muffins pans are smaller so I got 18 muffins)
- Bake for 25 minutes or till cake tester inserted in the middle comes out clean
- Let cool
- Warm slightly before eating; can also be eaten with butter or honey

I slice them and eat them with honey or Preethi’s pepper jelly…that will neutralize all the healthy stuff in the tasty muffin.
