Morning Glory Muffins

When you come to a realization that Covid is here to stay for some time and you are living in sweats and not sure if your jeans fit anymore but you still have a sweet tooth you find a recipe that is healthy and tastes as good as a slice of carrot cake.

I used to make this long ago and forgot about it. I think it was from beyond the moon cookbook. I recently found a recipe from the King Arthur’s site. I have modified it slightly. This recipe calls for 1/4 cup orange juice. We don’t drink much juice at home so I bought a small carton of juice and froze the rest in an ice cube tray. 4 cubes is about 1/4 cup.

Ingredients

  • 1/2 cup raisins
  • 2 cup whole wheat white flour or atta
  • 1 cup light brown sugar
  • 2 tsp baking soda
  • 1 1/2 tsp cinnamon powder
  • 1/2 tsp ginger powder or 1 tsp sweet turmeric blend (a blend of turmeric, ginger and cinnamon)
  • 1/2 tsp salt
  • 2 cups peeled and grated carrots
  • 1 1/2 cup peeled, cored and grated apples
  • 1/2 shredded unsweetened coconut
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 1 tbsp powdered flax seeds
  • 2/3 cup vegetable oil
  • 3 large eggs
  • 1/4 cup orange juice
  • 2 tsp vanilla extract

Directions

  • Preheat oven to 375ºF (195ºC)
  • Soak raisins in hot water
  • Mix together, flour, sugar, spices and baking soda
  • Stir in carrots, apples, coconuts and nuts
  • Whisk oil, eggs, vanilla extract and orange juice
  • Add to dry ingredients
  • Drain raisins and add
  • Grease muffin pans
  • Fill pans with batter (My muffins pans are smaller so I got 18 muffins)
  • Bake for 25 minutes or till cake tester inserted in the middle comes out clean
  • Let cool
  • Warm slightly before eating; can also be eaten with butter or honey

    I slice them and eat them with honey or Preethi’s pepper jelly…that will neutralize all the healthy stuff in the tasty muffin.
