Hot Spinach Dip

I love making appetizers. When I tire of hummus and baba ghanoush, I make this dip. It has been a sure hit every time I have made it. I serve it with breadsticks, crackers or bread. This is a recipe which has been modified from a recipe from Martha Stewart. It is rich and cheesy.  Many of my friends have asked for this recipe, so here it is.

Ingredients

2 tsp olive oil

3 cups washed and chopped spinach. (around 2 big bunches)

You could use frozen spinach too.

½ cup onions- chopped

3-4 garlic cloves, chopped finely

¼ tsp nutmeg powder

180 grams cream cheese

½ cup milk

2 tbsp parmesan (optional)

1 cup shredded mozzarella

2 tsp tobasco sauce or 2 tsp red chilli flakes

½ tsp soya sauce

Salt and pepper to taste

Directions:

Preheat oven to 180º C.

In a pan, heat oil, onions and garlic and saute. Add spinach and cook until completely wilted for about 10 minutes.

Transfer to a colander and drain all the liquid, pressing it to get all the liquid out.

In the same pan, heat milk. Add cream cheese and parmesan and mix well till the cheese melts.

Add the spinach, nutmeg, tobasco sauce, soya sauce, salt, pepper and ½ cup mozzarella and mix well. (Nutmeg goes really well with spinach. I was first introduced to this in Swedish recipes.)

Pour into an oiled baking dish. Sprinkle with remaining cheese and bake for around 20 minutes till the cheese is golden and bubbly.

Serve hot with breadsticks, cracker or good crusty bread.
