It is summer again and I have started growing vegetables in my garden. For the first time I grew icicle radish (mooli/diakon). I had never realised how easy it is to grow diakon radish. You plant them in the spring (sprinkle seeds on the soil) and in 21 days you have fresh radish. A recipe for the greens will be posted soon.
I wanted a salad which is fresh and light as I was cooking a lot of spicy food and this worked out well. I adapted this recipe from the NYtimes. This is a quick and easy recipe.
Ingredients
3 oranges, peeled and sliced into rounds
3 small tender icicle radish (the original recipe uses a bunch of red radish), cut into matchsticks or grated
2 tbsp lemon juice
1 tbsp sugar
Sea salt
orange zest (optional)
2-3 mint and lemon basil leaves, chiffonade
Directions
Combine lemon juice, sugar jest and whisk till sugar dissolves. Chill dressing
Arrange orange rounds in a serving dish. Sprinkle radish on top.
Sprinkle zest and salt
Pour dressing, garnish with the herbs and serve.
Great combination of flavors in this salad! 🙂
