Chimichurri Sauce

I was introduced to two sauces this year; chimichurri and green goddess dressing. Posting chimichurri and will post Green Goddess soon. Both are easy to make with fresh herbs. Chimichurri uses parsley and cilantro. You can use this on meat or vegetables as a side.

Ingredients

  • 1 cup cilantro
  • 1 cup parsley
  • 2 scallions or 1/2 small red onion -peeled and chopped
  • 2 tbsp. fresh oregano
  • 2-3 cloves of garlic, fried in oil if you do not like the raw taste
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 jalapeno – chopped
  • salt and pepper to taste

Directions

  • Combine all ingredients in a food processor and blend to a smooth paste
  • Serve on roasted vegetables or meat
Suggestions

I freeze in 1/2 cup portions and use later when needed. Good to make in the summer when fresh herbs are abundant
